Roasted Citrus Curried Shrimp Over Fresh Salad

How can you resist not wanting to dive right into this Roasted Citrus Curried Shrimp Over Fresh Salad? There is nothing better than a fresh salad to lift up your day. And it is healthy to boot! BONUS!

Curry Shrimp salad with avocado and greens

With my up and down weight loss journey, I still love to have a nice, fresh salad. To be honest, I am more up than down but once you find that yum factor in foods, it is hard to let it go. One of my family favorite mixture of spices is Curry. It has such an amazing flavor. If you never tried Curry before, the best way I can describe it savory! Curry has a unique flavor that is deep and earthy from the blend of savory spices.

If you have tried Curry before and are not a fan then add other spices to this Salad. There is no rule saying you can not:) Enjoy and let me know how it turns out!

Roasted Curried Shrimp Over Fresh Salad

Ingredients:

1/2 tsp kosher salt, divided in half

1 1/2 to 2 lbs shrimp, cleaned

1 Tbsp olive oil

1 Tbsp curry powder

1/2 tsp black pepper

1 Avacado (Sliced)

fresh baby spinach or other greens and salad items you desire

 

What to do:

Put shrimp in a bowl with the remaining 1/4 tsp salt, the olive oil, curry powder, and the black pepper.

When oranges are done roasting, add the shrimp to the baking sheet with the oranges, stir around to combine a bit, and put back in the oven, roasting shrimp until nice and pink. You may want to stir the shrimp around a bit during the roasting time. It should take less than 10 minutes for the shrimp to cook.

Serve shrimp orange mixture hot, spooned over fresh baby spinach, Avacado or other salad ingredients.

Will make 4 salads.
